What's the best part of Summer? The beach, sunshine, BBQ's…and ice cream, obviously. You can always get some 100-calorie ice pops, or cups of ice cream at the grocery store, but we rather eat whole, clean foods, that give us some delicious to savor and some nutritious benefits.

So we've been racking our brains to keep an endless summer in our hearts, minds and bellies and wanted to share a fun, nutritious treat. All you need are three simple whole ingredients and about 20-minutes to sit and wait. We chose chia seeds as the main ingredient for a few reasons: they pack a punch, and we love that. Tons of protein, tons of Omega-3's and when paired with a liquid, they expand and make a thick consistency (no crazy preservatives and processed ingredients here!).

Frozen Raspberry Chia Pudding

  • 1/4-c of chia seeds

  • 1/2-c of unsweetened almond milk

  • 10-semi-frozen fresh raspberries

Combine chia seeds and unsweetened almond milk in a bowl or tupperware container. Stir, cover and place in the fridge for 15-30-minutes. The chia seeds and milk will form a thicker pudding while it chills.

About 10-minutes before you pull the chia seed pudding out of the fridge, slightly defrost 10-raspberries, by simply sitting them out on the counter.

Once the chia seed putting is complete, top with the semi frozen raspberries and stir together.

A nice sprinkle of cinnamon or coconut shavings pairs nicely with this too!

You'll not only be getting a tasty treat, but almost 10-g of protein, nearly half of your fiber for the day, along with a quarter of your daily calcium needs. And did we mention a boost of Omega-3's and fiber, all for only 280-calories. Ice cream just doesn't stack up on this cup of heaven!
